I hope that you're doing well,

how can I edit the toolbar in Cognos dashboards,
I mean how to remove edit, save, share, undo, redo buttons 

Is there any extension to do so?

You might try to add &ui_appbar=false&ui_navbar=false in your URL.

the &ui_appbar=false&ui_navbar=false removed the app bar and navbar and that is great 
also the two extensions did a great job

but can I remove the "Edit" option also?

You should use only the extension called Exclude_Filterdock, not the other one.
