Is there a way to capture administrative events such as publishing of an API, deleting of an API etc? Would monitoring logs be feasible? Is there a better way? I'd highly appreciate if you can share your valuable knowledge in this regard.

You can configure audit events to be sent to another system - which I think would cover what you need:
