thanks for the tip. What spooks me a little is your last sentence "I think this will remove the dimension from all plans including those that are closed".
Can maybe product management tell us what happens with old archived and closed plans if I hide dimensions from tabs or completely remove custom dimensions?
I do not want to wreck old plans by removing dimensions, but if I only hide the dimension, will this also impact old plans? Because if it does, and I unhide a custom dimension for the purpose of looking at an old plan (which I made active again), will it show by default in the other active plans, or will it only be in the list of possible columns and not be shown automatically on the plan tab? That might confuse users.
I hope my point is clear enough, does anyone know how this will work out?

It took me way too long to figure this out so leaving a note here in case anyone else finds themselves in same boat...
You can now delete custom dimensions in IT Planning by going to Schema>Custom Dimensions>right click the dimension and select "Delete". If you only want to delete the dimension from one tab, go to Schema>Line Items>select the view you want to delete it from>right click the custom dimension you want to remove.
Note I think this will remove the dimension from all plans including those that are closed.

No, there is currently no way but we have submitted the idea on the ideas page so go and vote for it:
Provide a way for us to delete attributes and customize the "view by" option
