I am able to get API Access to Workday working fine, but have not been able to get anything, even very simple API Calls with no parameters, to work using generic REST API.  The documentation I have found is very high level.  Any advise / guidance on better documentation / examples of using the REST API or how to debug when you get errors (usually 404)

Tricki issue, @Edward Sullivan. In a similar scenario with the REST connector, I reached out to Support and they asked me whether it would work with Postman. It sounds like you know what you're doing​, so doing that might provide the insights you (or Support) need.
I am not aware of any detailed documentation at this level for Datalink.
