There are some way to extract the API Connect analytics (API Connect is deployed On Premise) information to some storage service in cloud maybe an AWS S3 or something similar?

I saw some solutions using the output plugins, but couldn't find how do it on a more customized solution.

Can you provide more details about what you want to do, your post is all a bit vague, which makes it pretty hard to help with.

Analytucs can offload to all sorts of systems (including an arbitrary http endpoint). You can also back up analytics to S3/sftp etc but how does that help you? What would you then do with the analytics data in s3?

Data is only useful if you can query it and get insights, hoarding it in a write-only system is of no real value.
