The supported data sources are listed in here:
IBM Cognos Analytics on Premises 12.1.x Supported Software Environments

Click the Supported Software tab to view supported data sources. You will find a long list of supported database.

From this pageDQM testing of vendor-supported client driver versions for each Cognos Analytics 12.1.x release, you will find supported databases and OLAP datasources.

To finish, you can create data modules that can be based on data servers, packages, uploaded files, data sets, and other data modules. You can combine multiple, different types of sources into one data module.

To add to Patrick's great answer, also be aware that the supported data sources vary depending on the platform Cognos Analytics is being used on. For example, the on-demand Cloud version has a small subset of supported data sources compared with the on-prem version. The hosted on-cloud version and Cloud Pak for Data cartridge version support only the Dynamic Query sources.
