8.6.0 will contain:
Any and all features developed in prior releases (a non-LTS release is a full and valid/supported release)
New 8.6.0 content
8.6.0.3 contains all the 8.6.0.0 content + post GA fixes

Hi Robert,
you can upgrade your 7300 to 8.6. There will be no downtime if your hosts are connected to both controllers and the multipath configuration is correct. Once you've upgraded to 8.6, you may also wish to consider using the Two Person Integrity feature, available since 8.5.4.0, which provides additional security on the 7300.
