Hi Danny,
I wasn't the Offering Manager on ODM when this happened, but back in about 2015 I believe due to discussions between the vendor provider of the Optim Connect technology (Attunity) and Optim, it was concluded that customers / users should only use Optim Connect to access mainframe data on the one hand, or flat file data on Distributed.
I believe the removal of those choices is a consequence of that decision.

Subject: Optim Connect 5.3.3 Build 26 vs 5.3.3 Build 53
So during my FP6 upgrade testing I've just noticed that quite a few of the Optim connect data source types (providers) are no longer in Optim connect 5.3.3 Build 53.
I'm trying to find release notes or a reference to why they've been removed but I'm not able to. I have a ticket open for this but I thought i'd bounce it off you guys as well. I specifically use the ODBC as a Fed pass-through. P.S. it's not a licensing issue as far as I can tell. I have a brand new License with the ODBC provider included.
See attached screen capture for a comparison between Build 26 and Build 53.
