Currently working on MAS Health and was thinking if there's a way to update the UI 

For example:

I want to remove Age and RUL in the cards

Or I want to update the columns in the operational status

If there is a way or you have found a way please say so and thank you for your answers.

Yes there is a way to configure the Health Graphite UI, but it requires to setup a local MAF Tools docker to be able to connect to your MAS Health environment. Once installed and connected you are able to open the Health UI resources (RELENGINEER). In this xml / ui Graphite Application Designer alternative you can hide tile, add client specific attributes, add custom created or OotB sigoptions to display or hide tiles , sections (accordions) by using the Security Group setting within your Maximo Manage environment.
