None of us on this forum can give you a definitive answer because how you setup your environment depends quite a bit on your corporate policies.
For example, does your network infrastructure support trunking/LACP?
How much redundancy does your environment require?
How much redundancy is your company willing to pay for?
What software does your company use to manage disk paths?
Do you need to support multiple types of SAN arrays? Multiple networks?
How much of the failover/fallback do you want to put in the hands of the sys admins of the client LPARs?
How much bandwidth do you have?
Do you want your dual-VIOs to be a primary/backup type of config or active/active?
Sit down and document what you have today and what you would like to have at the end. Then, figure out how to get there based on what you can do with the environment you have.
IBM makes very configurable products that support multiple options. All any of us on this forum can do is point you to best practice documents which you can find on Google or tell you how we do it in our environment.
