Thanks for the response! I created a test cube now with just a Date Dimension, and Measures, with no dimensional security, or additional languages specified, and unfortunately still no luck. (I did write a report over the test cube to make sure all is in order.)
Interestingly enough, I can open a new/blank dashboard against the cube, and even expand the dimensions and I can see the members within the levels, but I get the above mentioned error, as soon as I drag anything of that onto the canvas.

I just checked this with our on-prem 11.2 installation: everything worsk well with DC and dashboards.
Are there any things in your DC model which might casue problems here like multiple languages or security groups?

We upgraded to Cognos 11.2, and now we get an "Identifier not found" message on all the widgets in the dashboards that was created from Dynamic Cubes.
Cognos on prem....
Even when trying to create a new dashboard, it gives the same error once a data item from the cube is dragged onto the dashboard.
The same happens when trying to create an Exploration.
Normal reporting from the cubes works fine, so the problem just exists when creating/opening a dashboard or Exploration.
Any advice would be greatly appreciated.
