Is there any option to do some protection of OpenShift resources in an environment that utilizes IBM Storage Protect as backup solution?

You can use IBM Storage Fusion Software on OpenShift as container native backup application with application consistency support and configure it to use IBM Storage Protect as backup target - see the IBM Storage Fusion Software documentation for details.

Yes, you can use the Fusion Backup & Restore service: https://www.ibm.com/docs/en/storage-fusion/2.6?topic=protection-backup-restore

The OpenShift cluster doesn't have to be a Fusion HCI, the Fusion Backup & Restore service can be installed and utilized in any OpenShift cluster afaik. The service performs local snapshots and/or offloads backups to an IBM Storage Protect server via its S3 interface.

Storage Protect Plus could do that - but that option is not available anymore.

We use basic Velero / OADP backup towards Azure Blob storage.  Rudimentary for sure, but included in the shrinkwrap.
