I agree with the responses given so far, and maybe this addition information will help with the understanding of the Project Roll check box.
So with the Schedule definition you can restrict the work activities that are displayed in the Gantt chart by using the Restrict Work Dates. So clients are setting up Schedule definitions to only show work for "Next Week" (or "Next Month") - and rather than setup multiple schedule definitions with a date range for each week of the year they utilise the Project Roll option to automatically update the dates to always reflect next week. So this week they are planning the work for Next Week and when they get to next Monday the work orders in the Gantt view will automatically reflect the 'new' Next week.
I hope this adds some clarity.
