I had to make a slight mental adjustment , as I'm used to associating Serverpac with 'zOS or subsystem replacement (CICS, DB2 etc)', and CBPDO as 'individual product'.
In that case, do you know if it's the case that the products previously/currently installed in Shopz via CBPDO will have a Serverpac equivalent (to make them eligible for zOSMF implementation) ?

That is correct, IBM software products installed via zOSMF Software Management must be ordered in Shopz as a Serverpac rather than a CBPDO. Products in CBPDO form consist of ++FUNCTIONs and RELFILEs, and are installed using SMP/E RECEIVE, APPLY, ACCEPT.

Am I right in thinking that software products installed via zOSMF Software Management must be ordered in Shopz as a Serverpac rather than a CBPDO ? Had an issue whilst attempting to create a Portable Software Instance from the latter, but no such problems when re-ordered as a Serverpac (due to additional components eg JSON files being downloaded).
