Some of our WebSphere ND version 6&7 servers are running on RedHat Linux 5. As we are planning to migrate the Operating from RHEL version 5 to RHEL version 8. I would like to know does the WebSphere ND version 6&7 support on RHEL 8 ? 

If yes,  I would like to know the know if there is any documentation for it and also know issues.

ND 6, 7 (& 8) are EOS.  ND 7 is still in extended service and supported platforms are listed here:  https://www.ibm.com/software/reports/compatibility/clarity-reports/report/html/osForProduct?deliverableId=1AB7F4000ABD11E8BE1A0F0F1F3F9A88&osPlatforms=Linux&duComponentIds=S003|S001|S002

RHEL 8 is NOT listed (probably because ND 7 went EOS before RHEL 8 was released).    However, unless there's some incompatibility with older O/S's it would be reasonable to assume this is supported under "Other Configurations":    https://www.ibm.com/support/pages/websphere-application-server-support-statement

As Sam alludes to, the combination of running WAS v6 and v7 on RHEL would have never been tested.
As you probably know, WAS v7 went End of Support 30/04/2018 and WAS v6.1 30/09/2013.
It might work OK, it might not, who knows? What I do know is that you will be on your own if you encounter any issues.

The policy is a little more liberal on this:
