If your models use cell-based then it's easy to do a search and replace to change all the references. There is also a utility in the CAFE Options section that changes all the connection references for you. Assuming the cube folder structure is the same as it was in the prior system then that is all you need to do. If the cube location structure is different then you'll need to do the separate search/replace on the cube source too.
If you are using crosstab models then your only option is to rebuild the crosstabs as there is no utility available to change these pointers. Crosstab models have all the connection information hidden within the workbook which makes it impossible to edit.
