I'm having problems with opening files. That is, they're not opening at all, no matter which way I try to open them. I'm on Mac OS (newest version). If I go through "open" - there are no files listed at all - every folder is blank. If I click on the file icon it indicates it's going to open, but then nothing happens. I have managed to open one file, but as SPSS is open, it won't allow me to open the other file. I've re-installed but it hasn't resolved the problem. Its as if SPSS is not recognising any thing at all on my computer.

Any help would be most appreciated.

May I assume you are on macOS 10.15.x (Catalina)? The newest version of the macOS imposes some pretty specific permissions restrictions - specifically in subdirectories of the user home directory. Please see this discussion:
