That's exactly it. You only select the devices you want to update.
NOTE: If you have a FC Adapter with 4 ports (fcs0, fcs1, fcs2 and fcs3), selecting only one will update all four because the firmware updates the entire board.
Below is the information you can obtain directly from the HMC Update screen.

In the previous version of this procedure we were presented with this interface, where it (at least to me) was logical and understandable that I select the device I wanted or needed to update.

With the new procedure I am presented with this instead

I have been browsing thru the View or update the I/O firmware from the HMC
To find any documentation on the procedure to ensure that I am supposed to "remove" the adapters that I don't want to or need to update, but so far I haven't found anything.
Can anyone confirm that I have interpreted the GUI correct?
