I am a very basic user of Maas360, just using it for our drivers and limiting app access 
No groups or anything, just users using the same set of apps.

I would like to add a tablet to my account and lock it to kiosk mode, allowing it to access only a Google Form. 

Does anyone have a guide or anything to walk me through the process?
I don't want to affect the existing non-grouped users or devices

so what you are looking for here is Single App kiosk mode. On your Android policy under the Kiosk section select edit and then set the mode to Single app

Enter the app id for you Google form and then save and publish the policy.

you shouldn't need the maas360 browser. 

my account does not have the MaaS360 browser
