Is there any documentation or reference available to below use case 

Read the claims attributes from webservice response
Populate claims values and set jwt as cookie.

you can use the Mapping Rules to read an populate the claims. Some samples are found in the ISAM documentation. We are working with grant quite deep at the moment to implement an IdP which is aligned to the OIDC Standard documents. You have to code close to everything. Documentation of the available classes can be downloaded as java doc from the appliances download area.
