I figured it out! I did need to install the SPSSClientUI.jar fix that is available on the IBM site. With windows I did not need to delete the old renamed .orig file (in fact when I did, then SPSS wouldn't boot).

You didn't say, but I am guessing that you are on a Mac. With V27, Statistics uses the native Mac file dialog boxes by default, and they don't provide these options. But go to Edit > Options and you will be able to change your preferences to use the Statistics-specific dialog boxes as before.
