We need to change the hostname for the servers where IS+TN and MWS are installed.

At a first glance we found different files where hostname appears on wm filesystem

I am worried about database level configuration that we may miss with just greping the hostname on configuration files…

Can you help me on this issue?

This is not supported… You can change IP address associated to a hostname assuming you had used hostname during product installation…

For now to proceed, you could export all assets by creating a build using Deployer, after changing the hostname do an installation of products, configure to point to the same database schemas, and use Deployer to deploy all the assets from the build onto the same server.
