The real answer is ... it depends.
But if we take from best practice, I would start with at least a 10 STAP to 1 collector ratio. So you need at least 2 and one failover collector for patching and maintenance. A basic starter size of 8 cpu's and 32gb of RAM is a good start. The disk space depends on if you are keeping the data online or moving it to Guardium Insights or the SIEM. Whatever amount you think you need - double it since Guardium will take half to cover for the OS, export/archives, and other supporting space required. 600g is pretty standard but it really depends on the behavior of the application and how much you need to keep online.
The next question is just how busy are they. I have had one STAP require 10 collectors to be able to keep the datamart file sizes within a manageable size and timeframe to a reporting system.
So I would start with 3 and then you will have to see how they keep up, what your policies capture, flat logging, request rates, etc. You might find that you need to increase memory. You cannot change the disk size after creation.
