ITX has a designated Pack for EDI, that comes with predefined Typetrees which can be used on Input cards to validate EDI data. I assume you already have a suitable XML Schema (XSD) to use on output which has all the fields you require.
From there it is a simple matter of 'mapping'. EDI is quite a complex data structure, and tackling this kind of mapping for your first attempt is not a great idea.
Why don't you start with something simple, and work up to EDI? I can recommend these good resources:

I find it highly unlikely that somebody will have a documented step-by-step guide to creating and EDI to XML mapping that suits your exact need. This si partial because, if this sort of document existed, then there would be a reduced need for Services people in onsite engagements to do exactly that sort of implementation.
