I think the what;s new type docs are bundled with the products. Personal opinion: There are so many enhancements to 8.0 over 7.5.1 that if you are considering an upgrade, 7.5.1 should not be considered.

Big new functions: map debugger, map profiler (for performance), pagesize & count command line tool, able to turn map and adapter tracing and logging off and on, from the management console, without stopping or even pausing the Event Server.
