I used IBM Storage SAN Volume Controller as starting point at Storage Family and never get to the SpecV controllers.

yes, that's not a problem.
As per SSIC, the only restriction on using FS7200 as SVC back-end storage is the minimum firmware level of 8.2.1.8:

The path to follow within SSIC is this one:
- Storage Family: IBM Storage Virtualize Controllers --> the virtualizing device
- Storage Model: Spectrum Virtualize Storage Controllers --> the virtualized storage
- Storage Version: 8.5.x --> SVC code level
- Storage Controller: IBM FlashSystem 7200 --> the virtualized device type

Currently, we have a SVC cluster running firmware v8.5.0.x. We now want to virtualize a FS7200, which has firmware v8.6.0.x.
We are unable to upgrade the SVC to v8.6.0.x at this time.
The question now is whether the Backend is allowed to run a higher firmware level than the SVC?
I can't find the information on the IBM website.
