I figured it out on how to increase the current two partitions.
Firstly i needed to allocate the new disc to the "extended" file system part in order for me to be able to increase the existing partitions.
However, i could only increase one of the partitions, the inactive one and not the active. What i then needed to do was to delete the inactive partition and then create a new one, then i could increase both the existing one and the new.
Note: If you delete the inactive partition you will loose all the data on it, so if you have data on the inactive partition you don´t want to loose you need to create a new partition and copy the data to that new partition.

We increased the disc on our VM and then used GParted to allocate the added disc.
However, when using GParted we couldn´t change the two existing partitions, instead we could only create a new partition for the added disc.

If you increase the size of the disk the appliance will not automatically increase the size of the partitions. You need to do this yourself manually using something like gparted. You just need to ensure that both partitions are of equal size.
