I obviously need to move those connections to a switch and create a private network but am unsure of what pitfalls there may be in doing this. The p5 is a production system so minimal or no downtime would be the preference. The p7 is a new server. I am not concerned about the new network setup...just the impact on the existing HMC lpars and their profiles. Any and all thoughts appreciated.

you just need to create a private network on a switch. Connect the hmc and p5 box to the switch and ensure they are still talking. Then add the p7 hmc connection to the network, it should be discovered by the hmc. No downtime is needed.
