Hi Kari,
The manuals are very good for this, there are some quick start tutorials for each of the backends that are an excellent starting point:

There are also a number of youtube videos, google 'zos connect quick start' and look at videos and you will find them.

Hi Kari,
You can also get a free zTrial machine to play with z/OS Connect EE. It contains both "API provider" scenarios, if you want to expose your COBOL application as a RESTful API, and an "API requester" scenario if you want your COBOL application to make a RESTful API call.

As Steve says (thanks Steve!) the docs contain good information about getting started and I also gave a presentation about installing z/OS Connect EE, creating your first server and deploying your first API provider here:
